CACHAVA’S HOLIDAY MENU: A HUG FOR YOUR TASTE BUDS

Picture your classic Christmas dinner at home… I bet apple salad, fruit jellies, fruity flavors, a good pasta, meat, and of course, mashed potatoes came to mind.
CACHAVA, a steakhouse by Grupo Carolo located in Bosques de las Lomas in CDMX, unveiled its holiday menu, and we were there to try it. With a proposal they proudly called “the best menu we’ve had in years,” under the hands of Chef Mike Dávila, it’s a bold and modern reinterpretation of classic holiday flavors.
A well-rounded experience from starters to dessert. We began with delicate flavors paired with white wine: guava salad stuffed with ricotta cheese and caramelized walnuts, roasted beets with blackberry vinaigrette, and my personal favorite—beef tartare with Parmigiano Reggiano and sautéed mushrooms that left a taste I’m still savoring.
For the main course, red wine accompanied a selection of grilled meats: short rib glazed in its own juices, baby back ribs in honey mustard sauce, and herb butter roast beef with gravy—a meat selection for every palate. The sides reimagined the classics: apple salad with blue cheese and caramelized walnuts, smoked mashed potatoes with butter and gravy, and mac and cheese with Parmesan and truffle sauce—a collection of flavors that took me back home.
To finish, my favorite part: dessert—a chocolate bruce with toffee sauce and fleur de sel. If you’re a chocolate lover, the first bite will take you straight to heaven.
The menu is cohesive and beautifully tied together, honoring festive flavors while being accessible to every palate. You absolutely must visit this season to try it out and pick your favorites to share with loved ones.
